Recently, we had the absolute honor of traveling down to the historic Buffalo Trace Distillery in Frankfort, Kentucky. Our mission? To select our very own single barrel of Weller Full Proof, alongside our good friend Jason Kern from Cleveland Barrel Hunters. Nestled along the banks of the Kentucky River in Frankfort, this property holds centuries of distilling history. From the pre-prohibition era to the modern renaissance of American whiskey, Buffalo Trace has stood the test of time, producing some of the most sought-after bottles on the planet. For any bourbon enthusiast, simply visiting the campus is a bucket-list item. But getting the opportunity to actually go inside their barrel selection program, specifically for a heavy-hitter like Weller Full Proof, is something most people only dream about.

As we pulled onto the grounds, the air itself seemed to smell differently—a rich, sweet blend of aging oak, charred staves, and that unmistakable Kentucky humidity mingling with fermenting grains. The anticipation was palpable. We knew we were about to participate in a tradition that shapes the very fabric of modern bourbon culture. Every single barrel of whiskey is unique, a singular expression shaped by years of weather fluctuations, wood interaction, and time. We were ready to find our needle in a haystack.

You cannot talk about this incredible journey without highlighting the amazing partnership that made it happen. We teamed up with Jason Kern from the Cleveland Barrel Hunters for this monumental excursion. Collaboration is one of the most rewarding aspects of the modern bourbon community. Bringing together different palates, perspectives, and shared passions elevates the entire experience.

Jason brings an incredible depth of knowledge and a refined palate to the table. When you are tasked with selecting a single barrel that hundreds of people are eventually going to taste and enjoy, you want trusted allies by your side. Working alongside Jason meant that we had multiple sets of trained tastebuds analyzing every drop, debating flavor profiles, and ultimately reaching a consensus on what a world-class Weller Full Proof should taste like. The camaraderie, the laughs shared over breakfast in Frankfort, and the shared excitement as we walked toward the distillery made the day even more special.

Stepping Inside the Historic Warehouse H

If the Buffalo Trace campus is hallowed ground, then Warehouse H is the cathedral. There is perhaps no single building in the entire world of bourbon that carries as much mystique and reverence as this structure. Built in 1934 by Albert B. Blanton, Warehouse H is famous for being the only metal-clad warehouse on the distillery property. Colonel Blanton believed that the metal walls would absorb the sun's heat more intensely, causing the metal to expand and contract at a rapid rate, which in turn would force the whiskey deep into the charred oak staves and pull out maximum flavor and color.

Walking through the heavy doors of Warehouse H is a sensory overload. The lighting is dim, casting long shadows across thousands of resting barrels stacked high into the rafters. The aroma of the angel's share—that sweet, intoxicating evaporation of aging whiskey—hangs heavy in the air. Knowing that this is the very warehouse where barrels of the legendary Blanton's Single Barrel are stored made the hair on our arms stand up. To stand in those aisles, breathing in the history, and realizing that we were going to taste potential future masterpieces right there on the floor, was a surreal moment we will never forget.

The Art and Science of Selecting a Successful Single Barrel

Many casual whiskey drinkers assume that picking a barrel involves walking into a room, taking a sip, and saying, "That tastes good, let's take it." In reality, the process is a fascinating blend of art and science. When you do a private barrel selection at Buffalo Trace, you are presented with a flight of samples drawn from different floors, different locations, and different zones within the warehouse.

Each sample tells a different story. One might lean heavily into rich baking spices and dark chocolate, driven by higher heat exposure on the upper rungs of the warehouse. Another might showcase vibrant caramel, vanilla, and bright cherry notes, influenced by a cooler, more stable microclimate near the floor. Our job as tasters was to evaluate each sample objectively. We looked at the color in the glass, checked the viscosity by swirling it to watch the legs crawl down the sides, and then meticulously nosed and tasted each option multiple times. It requires immense focus because your palate can easily become fatigued after tasting high-proof spirits, which is why water, crackers, and frequent palette cleansing are absolute necessities.

Tasting and Choosing Our Weller Full Proof

Now, let's talk about the star of the show: Weller Full Proof. The W.L. Weller line, known for its wheated bourbon recipe where wheat replaces rye as the flavoring grain, is already legendary among enthusiasts. It delivers a smoother, sweeter, and more approachable profile. But the Full Proof expression takes things to an entirely different level by bottling the whiskey at the exact same proof it entered the barrel—a robust 114 proof—without sacrificing that signature wheated softness.

As we sat down with our selection kit inside Warehouse H, the pressure was on. We had several Weller Full Proof barrel samples lined up in front of us. Sample number one was bold and oak-forward, packing a punch of leather and tobacco. Sample number two was an absolute dessert bomb, bursting with spun sugar, butterscotch, and sweet vanilla cream. Sample number three offered a complex interplay of bright red fruits, cinnamon spice, and a velvety mouthfeel that seemed to linger for minutes.

We went back and forth, comparing notes, debating the nuances, and letting the whiskey open up in the glass as it reacted to the oxygen. Ultimately, we reached a unanimous decision. The barrel we chose hit the absolute sweet spot of what we look for in a top-tier wheated bourbon. It balanced the high proof with an incredible, creamy sweetness, offering complex layers that kept evolving with every single sip. It was everything we hoped for and more.
